Follow the guidelines below to properly dispose of wastewater from cleaning kitchen exhaust hoods.

  • Dispose of wash water in a collection tub to be taken elsewhere or through the restaurant’s grease interceptor. NEVER to the storm drain.

 

  • If discharging through grease interceptor, make sure the water has cooled. Hot water may carry fats, oils, and grease to the sewer, bypassing any separation that can be done in the grease trap or interceptor.

  • Discharging any liquid or vapor having a temperature higher than 150°F or containing heat in quantities to cause the wastewater entering the wastewater treatment plant to exceed 104°F is considered a prohibited discharge (Municipal Code, Section 4.03.020.040).
